This meal comes together really fast. I make my own Taco Seasoning (recipe follows) but for convenience you can certainly use ‘store-bought’.
TACOS
Some fish. Whatever you happen to have will work. Amount varies with how many you’re cooking for!
Cut into small chunks and sprinkle taco seasoning all over. How much depends on how ‘seasoned’ you prefer.
Saute in a little oil till done. 5 – 10 minutes?
Warm up some soft corn tortillas (or use crunchy shells – up to you!) in a pan with no oil for 30 seconds or so.
Pile on the fish and top with Pico de Gallo, lettuce, avocado … and whatever else you want. Be creative! Add sour cream if you want but not necessary.
Roll them up and stuff them in your face! Certainly some good old ‘tater tots are a great side!

TACO SEASONING
- 4 Tbsp. Chili Powder
- 1 Tbsp. Garlic Powder
- 1 Tbsp. Onion Powder
- 1 tsp. Crushed red peppers (or more if you like spice!)
- 1 tsp. Dried Oregano
- 1 Tbsp. Paprika
- 3 Tbsp. Ground Cumin
- A bit of salt & pepper
Mix everything together. This will stay good for quite some time! A good thing to have in your pantry!
PICO DE GALLO
- 1# tomatoes, diced
- 1/2 medium onion chopped (about 1 cup)
- 1 jalapeno pepper, seeded and diced
- 1/2 cup cilantro, chopped
- 2 Tbsp. lime juice
- Salt & Pepper
Mix first 4 ingredients together. Add lime juice, s & p. Best eaten fresh. Easy to cut in 1/2 if this is too much. We usually do!
