A very simple salad with lots of variations.  We keep it pretty basic so we don’t need to keep a lot of ingredients on hand.

It’s delicious – and healthy!

(All amounts are arbitrary depending on how many people you are serving)

B & L’s GREEK SALAD (for 2)

About 10 Tomatoes (we use grape tomatoes cut in 1/2)

1/2 Cucumber, cut into bite-sized pieces

1 Sweet pepper (red or yellow is pretty ), chopped into bite sized pieces

1/4 Sweet onion, cut into bite sized pieces – or red onion if that’s all you have – but it will be HOT!

1/2 cup Kalamata (greek) olives

Lots of crumbled Feta Cheese (this will absolutely make your salad!)

Dash of dried oregano

Dressing:

Approx 1 TBSP Olive Oil – pour over all salad ingredients

Approx 1 TBSP lemon juice poured over and mixed.

I try to keep the ratio of oil to juice about 1:1, so if you’re using more veggies etc., use 1/4 cup oil and 1/4 juice etc.
