This salad is pretty versatile. Lots of options for substitutions and additions – and amounts are arbitrary. Use this as a template and make it your own! Great healthy idea for lunch – or dinner!
SALAD
- 2 cups packed fresh baby spinach, roughly chopped
- 1/2 medium red, yellow or orange bell pepper, diced
- 1 can tuna, drained and flaked
- 1 can beans or chickpeas – I find white kidney beans or chickpeas are the best
- 100 g feta cheese, crumbled
DRESSING
- 1/3 cup olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey
- salt & pepper to taste
Added at end: 2 cloves crushed garlic (do we have any recipes without garlic??)
Put all salad ingredients into a large bowl. Whisk dressing ingredients and pour over salad. Mix. Add the crushed garlic and mix again.
Here’s some ideas for add ins: Chopped red onion, chopped green onion, grape or cherry tomatoes. Instead of spinach, try baby arugula.
